In this unit, we will use artificial intelligence as a documentation and monitoring assistant in the food safety and HACCP system. What is HACCP?
HACCP (Hazard Analysis and Critical Control Points) is a systematic approach that predetermines and controls hazards to produce food safely. The basic concepts are:
- Hazard: A biological (bacteria), chemical (cleaning agent) or physical (glass, metal) factor that makes food unsafe.
- Critical control point (CCP): The stage at which a hazard can be prevented, eliminated, or reduced to an acceptable level. Example: cooking step where the internal temperature of the chicken reaches a safe level (high enough).
- Critical limit: The measurable limit that ensures safety in CCP (e.g., a specific core temperature and time).
- Monitoring: Regular measurement (temperature measurement, recording) that the critical limit is met.
- Corrective action: Action to be taken when the limit is not met (recook, destroy).
AI is useful in producing documentation of this system: a hazard analysis outline for a menu, a CCP checklist, a registration form template. But the approval, implementation and regulatory compliance of the HACCP plan depends on people and official regulations. AI does not replace a food engineer or safety officer.
Cold chain and temperature: the most critical area
The heart of food safety is temperature. The danger zone is the temperature range in which bacteria multiply rapidly; Food should not be kept in this range for a long time. The cold chain is the uninterrupted keeping of the product cold from the producer to the plate; If it breaks (e.g. heating during delivery, refrigerator malfunction), there is a risk. Cleanliness, hygiene and traceability
Food safety is not just about temperature. Personal hygiene (hand washing, clothing), cleaning and sanitation (surface, equipment disinfection), cross-contamination prevention (raw-cooked separation, separate knife/counter) and traceability (being able to track where a product comes from and which batch it is from) are parts of the whole. AI can produce draft cleaning schedule, checklist and registration template; May prepare summary materials for staff training. Implementation and control belong to people.
three mini cases
Case 1 — Early warning with log summary. A hotel kitchen kept dozens of daily temperature records, but no one could read them all. Common mistakes
- Having AI determine critical limits. Temperature/time values are taken from the legislation and measured.
- Applying the HACCP draft without an expert. The plan is not valid without approval by the food safety officer.
- Not reading the temperature log. Not keeping records and reviewing them misses the early warning.
