14 mandatory allergens
Food legislation requires certain foods that cause the most frequent and serious reactions to be declared on the menu/label. The 14 groups of commonly identified allergens are: gluten-containing grains (wheat, barley, rye, oats), shellfish (crustaceans), eggs, fish, peanuts, soy, milk (including lactose), nuts (hazelnuts, walnuts, almonds, etc.), celery, mustard, sesame, sulfur dioxide and sulfites, lupins, and molluscs. Attention: You can ask the AI "what allergens are in this recipe" and you'll get a first draft. But this draft is by no means the final statement. Allergen information cannot be printed on the menu without checking the supplier label of each ingredient and assessing the risk of cross-contamination.
Nutritional value: difference between estimate and official information
Nutritional value (calories, protein, fat, carbohydrates, salt) is important to the customer; Some follow diet, some for medical reasons. AI can estimate the nutritional value of a plate, but this is an estimate: it varies significantly depending on the brand used, the portion, and the cooking method (oiled or baked). YZ's statement "about 450 calories" is a preliminary outline; Official nutrition tables cannot be printed as an official label without verification by supplier product data or laboratory analysis. Health claims (e.g. "suitable for diabetics", "helps you lose weight") are also subject to legal regulation and cannot be used indiscriminately.
Diet adaptation: Where AI really shines
While AI is used cautiously on the allergen and nutrition “verification” side, it is a creative assistant on the diet adaptation side. He is quick to suggest ingredient substitutions to make a dish vegetarian (no meat), vegan (no animal products), gluten-free or lactose-free: olive oil instead of butter, cashew cream instead of cream, buckwheat/rice flour instead of wheat flour. These suggestions are a start; The taste, texture and cooking behavior of the substitute are tested in the kitchen.
