In this unit, we will use artificial intelligence as an accounting assistant in recipe cost and food cost (food cost - the ratio of the material cost of a plate to the sales price). The boundary is very clear: AI builds and performs the calculation; but the result depends on the prices you enter into it. No pricing decisions are made without the current supply price and manual verification.
How much does a prescription cost?
The cost of a dish is the sum of the quantity used × unit price of each ingredient in it. But beware of two pitfalls: first, wastage — the part lost when sorting/cooking the ingredients increases the cost; Secondly, unit consistency – it is necessary to convert the price of kilos towards grams and the price of liters towards millilitres.
Example: If 180 g of beef cubed in a plate is 400 TL per kilo, the raw cost is 0.180 × 400 = 72 TL. But if the meat wastes 10% when cleaned, it is necessary to buy ~200 g of raw meat for 180 g of cooked meat; the actual cost is 0.200 × 400 = 80 TL. Skipping waste understates costs and eats into profits. AI establishes this calculation quickly, but you must provide the wastage rate and current kilo price; If he makes it up, it will be wrong.
Food cost percentage and contribution
Food cost percentage is the ratio of the material cost of the plate to the sales price:
Food cost % = (Material cost ÷ Selling price) × 100
For example, if a plate costing 80 TL is sold for 250 TL, food cost = (80 ÷ 250) × 100 = 32%. In the sector, healthy food costs are generally targeted at 25-35% (varies depending on business type). The higher the percentage, the narrower the profit.
Contribution margin is the remaining amount after subtracting the material cost from the sales price: 250 − 80 = 170 TL. Food cost percentage shows the percentage of profit, contribution margin shows the amount of profit. It is necessary to look at both together: a cheap plate with a low food cost percentage may leave little absolute profit; Both are important in the menu decision.
Tip: When having the AI calculate costs, tell it to "show the formula and intermediate steps". This way, you not only see the result, but also which price is applied to which gram, and verify it manually once. Don't accept a black box "get this price" answer.
Target food cost to price
You can set the price in two ways. You either set the price and calculate the food cost, or you find the price based on the target food cost:
Selling price = Material cost ÷ Target food cost rate
Example: Cost is 80 TL, if the target food cost is 30%, price = 80 ÷ 0.30 = ~267 TL. This is a raw starting price; VAT, perceived value, competitor price, location and menu psychology are added on top. AI generates scenarios (three prices for 28%, 30%, 32%), you choose by strategy. Price is never set simply by formula; Market and brand reality are at play.
three mini cases
Case 1 — Hidden wastage, melting profit. A fish restaurant was selling a sea bass plate for 220 TL, and thought the food cost was 28%. The chef had the recipe cost reconstructed with AI, but this time he added the wastage (loss in sorting the fish ~45%). The actual cost turned out to be higher than expected; real food cost was 38%. The portion and side dish were adjusted, the price was updated by 20 TL and the food cost was reduced to 31%. The AI account that made the waste visible stopped a significant loss in the month.
Case 2 — Decision with price scenario. A new dessert would be on the menu; cost 45 TL. The operator asked YZ for a price scenario for 25%, 30%, 35% food cost: 180, 150, ~129 TL respectively. Case 3 — The trap of the fake price. Common mistakes
- Not taking waste into account. The raw-cooked difference and sorting loss underestimate the cost.
