Mandatory elements of the label
The basic mandatory elements that must be included on the label of a packaged food (within the framework of the Turkish Food Codex Food Labeling and Consumer Information Regulation):
- Product name: Legal name reflecting the true nature of the food.
- Ingredient list: All ingredients in decreasing order by weight.
- Allergen highlighting: In the ingredient list, allergens (e.g. milk, eggs, gluten-containing grains, nuts, soy) are highlighted in a different font/bold/underline, etc.
- Net quantity: Weight or volume (g, kg, mL, L).
- Date information: Recommended consumption date (TETT, "best by..." or, for microbiologically perishable products, expiry date ("must be consumed by...").
- Nutrition claim table: energy, fat, saturated fat, carbohydrates, sugar, protein, salt per 100 g/100 mL.
- Origin/manufacturer information, batch/lot number, storage conditions.
Attention: Allergen information is an area on the label that does not allow errors. Omitting an allergen (e.g., milk derivative in the “natural flavor” in the recipe) in the AI-generated ingredients list can have fatal consequences. Always verify allergen declaration with actual recipe, supplier specification and cross-contamination assessment; Don't trust AI output.
Nutrition claim and health claim: two different things
The two concepts are often confused but are separate in legislation:
- Nutrition (nutrient) claim: Indicates a nutritional characteristic of the product (e.g. "low fat", "no added sugar", "high fibre", "energy reduced"). Each has a numerical condition.
- Health claim: Establishes an association between a food/ingredient and health (e.g. “calcium contributes to bone health”). Health claims can only be used if they are on the officially permitted/approved list and their conditions are met.

Tip: Before using a nutrition claim, obtain an accredited laboratory nutritional analysis of the product and meet the requirement numerically. In order for you to write "low fat", the amount of fat measured in 100 mL must be below the regulatory threshold, not what marketing wants. The statement is a result of the analysis result; not the other way around.
Risk of misrepresentation
Expressions such as "heart-friendly", "natural", "detox", "boosters immunity" are often either not included in the approved health claim list or cannot be used unconditionally. A health claim that is not on the approved list is misleading and prohibited. Statements that imply preventing/treating a disease cannot be used for foods.
Label draft and regulatory scanning with AI
You can use AI for label drafting and regulatory “where should I look” guidance; but AI cannot decide whether the statement is allowed or not and its numerical limit. Difference between weak and strong prompt:

This calculation reveals that the declaration "high fibre" cannot be written; If the AI text unconditionally said "you can type" you would have produced a misleading label.
Risk of timeliness and repealed legislation
Training data for LLMs stops at a certain date. A regulation may have changed, an article may have been repealed, or a threshold may have been updated. AI can render the old verdict as if it were current. Therefore, confirm each legislative reference with the current official text (Official Gazette, Ministry of Agriculture and Forestry Food Codex legislation portal).
Safety: Do not write any substance number, threshold value or "permitted declaration" statement given by AI on the label without confirming it from the current official Turkish Food Codex text. Misrepresentation after the label is printed; Product recall means administrative fines and loss of consumer confidence. The AI output is a draft; Only official legislation gives legal validity.
mini case
A snack company wants to write "HIGH PROTEIN" and "BOOSTS IMMUNE" on the front of its protein bar. Marketing is having AI prepare the copy; AI writes that they can use both statements without any problems and even adds a made-up regulation clause. The quality officer makes two checks before the label goes to printing. First: is the protein of the product sufficient in 100 g? The analysis provides the condition that at least 20% of the energy per 100 g comes from protein, "high protein" is suitable. Second: is the phrase "boosters immunity" on the list of approved health claims? The responsible person looks at the official list; This statement is not authorized and a general “immunity” claim can only be used for a specific nutrient (e.g. vitamin C, zinc) and with the approved statement — and there is no claim requirement on the product to support this. The second statement proposed by AI is misleading and prohibited; was thrown away. The made-up article number was also not found in the official text. Without verification, the company would have been charged with misrepresentation.
Common mistakes
- Confusing a nutrition claim with a health claim; equating “low-fat” (conditionally permitted) with “heart-healthy” (mostly permitted).
- Writing the statement out of marketing desire, without accredited nutritional analysis.
- Using statements implying disease/immunity without checking the list of approved health claims.
- Basing the allergen list on the AI output and not verifying it with the actual prescription and supplier specification.
- Not confirming the substance numbers and threshold values given by AI from the current official Turkish Food Codex.
- Ignoring the risk of repealed/updated legislation and using the old provision in the education history of AI.
- Giving the nutritional declaration table per portion instead of 100 g/100 mL and basing the declaration requirement calculation on the wrong basis.
In summary

Create a recipe that includes a realistic accredited nutritional analysis table for the product (energy, fat, saturated fat, sugar, fibre, protein, sodium on a 100 g/100 mL basis) and allergens. Give the AI a strong prompt to produce a mandatory label elements checklist, draft ingredients and nutrition declaration table, and condition statements for at least two claims requested by marketing (one nutrition, one health claim); Explicitly request that the AI not make up the numerical threshold and allow list. Then check the declaration conditions against the analysis values with your own account (Python or manually) and note which regulation/article from the official Turkish Food Codex both declarations need to be verified with.
