- Intolerance: Inability to digest or process a food (for example, in lactose intolerance, the enzyme that breaks down milk sugar is missing). It is uncomfortable but generally not life-threatening; Quantity tolerance varies from person to person.
- Medical restriction: Restriction required due to a disease or medication (e.g. potassium/phosphorus limitation in a kidney patient, complete prohibition of gluten in celiac patients, vitamin K consistency in patients using warfarin).

Cross contamination and hidden allergen
The most insidious dangers in allergy management are "hidden allergens" and "cross contamination". A hidden allergen is one that hides in unexpected places: soy lecithin in chocolate, milk powder in bread, peanut oil in sauce. Attention: Ask the AI "this recipe doesn't contain nuts, right?" Asking "yes, it's safe" and answering "yes, it's safe" is an unacceptable risk for an allergic client. AI does not see the label, it does not know the cuisine. Security verification is done by the human eye, the label and, where necessary, manufacturer confirmation.
Step by step: secure constraint management
- Collect the constraints completely. Record allergies, intolerances, diseases and medications clearly during the intake phase (Unit 2).
- Identify your allergy group. Ban a group, not just one food (tree nut group, shellfish group).
- Have the AI pre-scan. Have allergens and restricted foods marked in the plan/recipe — but don't take that as the final word.
- One-to-one human verification. Review every meal, every ingredient as a dietitian; consider hidden allergen and cross-contamination.
- Educate the client. Teach the client strategies for reading labels, “may contain” warnings, and eating out.

Case 1 — Latent allergen. For a peanut-allergic client, AI produces a "safe" chicken sauté recipe. Common mistakes
- Making AI the final word: Leaning on “safe” and skipping label reading — unacceptable risk.
- Banning a single food and forgetting the group: Banning hazelnuts and overlooking almonds (same group).
- Skipping the hidden allergen: Not scanning hidden sources such as sauces, ready-made products, spice mixtures.
- Not thinking about cross contamination: Ignoring the same fryer/knife risk.
